In the past, screw caps were associated inexpensive, poorly made wines. Today, that has all changed. Cork now has competition from screw caps, synthetics, glass and a whole range of other closures. This class will cover the use of alternative closures and examine how they affect the presentation and flavor of wine. We will compare wines in different closures and demonstrate some of the faults that result from contaminated or poorly fitted corks.

The Winemaker’s Art

Making wine is science. Having an understanding of chemistry and how it applies to fermentation is all based on formulas and equations. Winemaking, on the other hand, is an art. Like painters, winemakers use their talents and skills to create a unique bottling each vintage. We will look at different choices the winemaker makes from grape to glass. Participants have an opportunity to taste and compare finished wines highlighting the results of these choices, as well as unfinished wines still in progress.

We’ll explore sweet, sour, bitter, and salty tastes and their effect on flavor perception, as well as the fifth sensation of taste: Umami.
